If you turn your tires any direction other than the direction of the motion you'll end up losing that effect of the brakes and drift out.
Using those brakes you can still brake very efficient just making sure that your wheels are always parallel with the direction from where you are coming from. They just don't work very well on snow and that's also accurate.
We have those king of brakes in Forza Horizon 4. The brake will change between those states many time until the car fully stops. Modern brakes have a trick where even if you fully activate them they will allow the wheels to spin again (just a fraction of a second at a time) in order to gain friction with the terrain and then apply torque. In real life you are really fast and go full brakes what happens is there is no torque on the wheels and little to no friction with the terrain.
